Chablis

Chablis Vaudon from Maison Joseph Drouhin is for those who prefer Chardonnay at the cool, crisp end of the scale. There's no heavy oak flavor or tropical sweetness here. Instead you get lemon, grapefruit, green herbs and a mineral, lightly salty finish. Elegant. Very elegant. The wine comes from Chablis in the northernmost Burgundy, where Chardonnay grows in chalky soil with fossil deposits from an ancient sea. That doesn't automatically mean it tastes of stone and salt, but it's hard not to think of exactly those words when the wine hits the glass. Available by the bottle.
